UNIQUE FLAVOUR PROFILE

After malting our barley, we mashed and fermented it with selected yeast. Careful selection of the right yeast was key in developing a unique flavour profile for our spirit. We searched for a yeast that would contribute bright, citrusy notes in harmony with the flavours in the barley. Then, we adjusted the fermentation to ensure those aromas and flavours stayed present throughout the fermentation and carried into our new make.
